Baingan Paneer recipe

Ingredients

  • Large brinjals 4
  • Paneer 1/4 kg
  • Cumin seeds 1, 1/2 tsp
  • Coriander powder 1 tsp
  • Chili powder 1 tsp
  • Tomato puree 1/4 kg
  • Sugar 1, 1/2 tsp
  • Salt to taste
  • Ghee for frying

Cooking Directions

  1. Remove the skin of the brinjals.
  2. Cut into two, then cut long thin pieces.
  3. Deep fry to a golden brown.
  4. Cut paneer into squares and fry.
  5. Fry the cumin seeds in ghee.
  6. Add the spices and tomato puree.
  7. Stir till it is rich in color.
  8. Then add the brinjals and paneer pieces.
  9. Let it simmer till tender, adding 1/2 cup of water.
  10. Serve hot with chapaties.
