Bean and Sausage Soup

Ingredients
* 2 Tbs. olive oil
* 1 med. onion, chopped
* 1 red bell pepper, chopped
* 3 Italian pork sausages
* 2 lg. tomatoes, peeled, seeded and chopped
* 8 oz. green beans, trimmed and cut into small pieces
* pinch crushed red pepper
* salt
* 3 C. water
* 1/4 C. medium-grain rice
Directions
Pour oil into a medium pot. Add onion, pepper and sausages and cook, stirring occasionally until vegetables are tender and sausage is browned. Add tomatoes, green beans, red pepper and salt to taste. Add cool water and bring to a simmer. Lower the heat and cook for 15 minutes. Place sausages on a plate. Thinly slice the sausages and return to the pot. Stir in the rice and cook until rice is tender. This should take about 15 more minutes. Serve hot.
